Black beans, avocado and steak slices make a tasty burrito.

* 1 beef flank steak (4 oz.)
* 1/8 tsp. salt
* 1/8 tsp. pepper
* 1/2 tsp. canola oil
* 2 flour tortillas (8 inches), warmed
* 1/2 c. cold cooked rice
* 1/2 med. ripe avocado, peeled and diced
* 1/2 c. canned black beans, rinsed and drained
* 2 Tbsp. sour cream
* 1 Tbsp. salsa
* 1 Tbsp. finely chopped onion
* 1-1/2 tsp. minced fresh cilantro
1. Sprinkle steak with salt and pepper. In a small skillet coated with cooking spray, cook steak in oil over medium-high heat for 3-4 min. on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°).
2. Thinly slice steak across the grain; place down the center of each tortilla. Top with rice, avocado, beans, sour cream, salsa, onion and cilantro. Roll up; serve immediately.
